Build over ice in mixing glass, stir, strain into glass – dash of bitters and flame of orange.

Watch out for more savoury cocktails that are finding a toehold. Over the last year the Pickleback has taken most of the blog space and these continue in that direction. Very high flavour, light vinegar chasers or Thai drinking vinegars are on the way.
We’ve seen this coming for a while with people moving beyond sweet and salt, more home pickling etc and Thai and Korean flavours on the up.. palates are more accustomed to it. Lookout for more fermented ingredients and juices, and products labelled as rotten. Sure, this ain’t going to hit Little Chef or Garfunkels for some time, but you cutting edge guru’s might want to feature.

Brandy Shrub.
(To make three quarts.)
Take 2 quarts of brandy.
1 quart of Sherry.
2 pounds of loaf-sugar dissolved in sufficient water.
5 lemons.
Peel the rinds of two of the lemons, add the juice of all five, and mix with the brandy. Cover it close for three days ; then add the Sherry and sugar, strain through a jelly-bag and bottle.
Rum Shrub.
(To make nearly four gallons.)
Take 3 gallons of best Jamaica rum.
1 quart of orange juice,
1 pint of lemon juice.
6 pounds of powdered sugar dissolved in sufficient water.
3 pints of fresh milk.

Had a great meal with good friends at Bäco Mercat – started with the hamachi crudo and the blistered okra before diving into their signature bäco, like “the toron” oxtail hash sandwich. Countless delicious small and big plates followed.
Don’t skip on the libations – the chef, Josef Centeno, creates amazing shrubs to be enjoyed in cocktails or sodas. A favorite was the Inca Punch with pisco and chicha morada shrub.
